My Favourite Easy 3 Ingredient Banana Oat Pancakes

Hearty, healthy and delicious, I’m completely obsessed with these 3 ingredient pancakes. Treat yourself with an indulgent dash of cream, some cherries and cinnamon and you’ve got a mouth-watering breakfast you’re desperate to make every morning.

Have you ever heard of banana-egg pancakes? They consist purely of mashed bananas, eggs and oats, three ingredients and voila .. a nutritious breakfast! It is best to use overripe bananas which give the pancakes natural sweetness, making it the ideal solution for using those brown bananas when you haven’t the time to make banana bread!

Personally when it comes to breakfast I want food with substance.. something with protein, fruit and whole grains is ideal - all the good stuff so that I can kick start my day. As a mother I am always trying to be mindful of what I’m serving my little one too and this recipe is perfect for babies and kids, it's quick, nutritious and tasty.
I love eating traditional pancakes .. but usually feel a little guilty after I’ve demolished a heavenly, sweet stack of them. I stumbled across this healthy alternative one busy morning when we were in need of a food shop, but fortunately still had some eggs, oats and bananas. It has become quite a staple in our kitchen and I am always making a variation of it for either my daughter or myself. You can switch it up with additional ingredients, what ever you have available. I love adding sultanas to the batter or blueberries, some cinnamon too. Include fresh double cream for a treat or substitute with natural yogurt. Fruits always work well with this recipe, honey, yoghurt, or pomegranate sauce too. It all centres around the three main ingredients; banana, oats and eggs. That's it! You really can’t go wrong.

Method
Super simple, all you need is one bowl and a fork to mash to prepare.
Step 1
Firstly mash the banana. Lumps and chunks don't matter but I like to mash mine thoroughly.
Step 2
Next add the eggs and oats with a little cinnamon and a pinch of salt if you like, and mix together until smooth.
Step 3
At this point you could add sultana's or blueberries, a dollop of peanut butter, chocolate chips, what ever your preference and mix through.
Step 4
Cook by frying in a non-stick pan with a little melted butter or oil on a medium heat for approximately 2 minutes until they've started to set. You'll know they're ready to flip when you can ease a spatula underneath and the bottoms are turning golden.
Step 5
Flip and cook on the other side for a further 30 seconds.
Step 6
Finish with fruit of choice, I personally love topping with cherries and a dash of pouring cream!

Ingredients
1 ripe banana
90g of oats (I usually do this by eye and it equivalates to about 10-12 tablespoons)
2 eggs
Oil or butter for cooking
Optional extra's
Cinnamon
Pinch of salt
Chopped cherries
Pouring cream
